Geographical Location
Situated 14 km south west of Carcassone and 8 km from Limoux, the vineyard is part of a 250 hectar property comprising woodlands and scrublands, surounded by 40 hectars of organic cereal cultures. These surroundings therefore allow for a relative degree of protection from contamination of disease or treatments from neighbouring vineyards.
Terroir
Most of the plots are planted on hillsides with steep inclines, as well as with extremely varied geologies. These range from clay-chalk soils, to pouding and pebbles, as well as large white areas with a dominant chalk composition.
Climate
The Limouxin area has the particularity (draws its unique character from the fact that) of receiving both dry winds coming from the Atlantic, such as the Cers, and very humid ones , such as the Marin, coming from the Meditterranean. Therefore, so near to the Pyrenees.
Plantations
To hold account of the relief, the plantation is in great width with 2,50 between row allowing the passage of tractors 4x4 broad ways, to work inclined and to absorb the cant. To have an optimal density majority spacing is of 0,80m between stocks is a theoretical density of 5000 feet /ha. On 28 ha currently planted we have :
16 ha of red, with dominant Merlot, Syrah, frank Cabernet, black Pinot.
12ha. white with dominant Chardonnay, white Sauvignon, Mauzac.
The understocks were selected for poor yield and are adapted according to the variations of the quality of the ground often inside the same piece. The rib stalls allow a good wind resistance violent one and a good development of the leaf aera with 800 stakes drink /ha and a wire of head to 1,80 m. Because of the policy of replanting of the field
for 10 years, half of the vineyard has made up of young vines whose typicity can be only improving with their establishment in the grounds with the passing of years.
Culture
Exclusive uses of organic manures, with putting under grass 1 row out of 2, mechanical work of the rows and chemical weed controls of the cords. The décavaillonnage and the production of green manure are currently being studied. The size is simple Guyot with 6 by rods, and double Royat. Extension of the pre cutting, especially on the double Royat where one can thus avoid the dépalissage and the attachage. These short sizes make it possible to
limit the outputs and avoid the grape harvest in green. The treatments are limited to the bare minima to support an excellent medical state of the vintage.
Vintage
For the grapes which are vinified with the field the manual
vintage is made from a point of view of maximum quality, with the detriment of the costs which are very high.
Taking into account the small size of the pieces and the tanks, it is possible to gather the grapes with optimal maturity according to type of vines, the grape harvest are morning to return of the fresh grapes and in perfect state, taking into account the very strict instructions to leave all the imperfect bunches.
the cut bunches are collected in cases of 15 kglaissées full on the rows and collected to be directly brought to égrappoir it itself located on the trap door of the tanks. It does not occur more than 60 minutes between the gathering and the encuvage from bays. This respect of the raw material makes it possible to limit sulphitings and to cold start the pellicular maceration under the best conditions.
Outputs
For the grapes vinified with the field, the outputs vary
between 35 and 55 hl. in function of the age of the vines, type of vines, and the year.
Wine making
Thanks to 14 tanks out of cement from 20 to 290 hl, 5 tanks stainless and 5 epoxy resin tanks of 50 hl. One can vinify the pieces separately,et to isolate the juices from press and of runs.
For the reds and according to type of vines, during and after the pellicular maceration, pigeage, reassembly, addition of yeast, alcoholic fermentation pressing on press horizontal with screw of 15hl, then malo-lactic fermentation. All these operations are carried out with control of the temperatures.
For white AOC, the grapes are directly brought in small cages in the press and pressed with the raids, the juices are immediately cleansed cold and put out of barrel for fermentation and the breeding on dregs.
Breeding
Out of tanks on dregs and barrels of French oak, new 2 and
three wines, of 300 liters during 8 to 18 months following the regulation of the AOC Limoux and the potentials of the wines.
